Ok, so it wasn't a body swap machine but a duplicator. So at first the real mom became a duplicate of the neighbor and the neighbor became a duplicate of her. Then the son became a duplicate of her, and his friend became one too. That's how you get 3 of her. The dad assumed one was the original and the other two were clones/duplicates. The records of the neighbor exchange were erased making it look like the machine had only been used twice.
Where there three of them, or three different version them, three people became there version of her. Sounds crazy but haven't thought of this.
